Trinidad Callaloo

How to make Trinidad Callaloo 



Hi everyone, today I'm going to post this recipe for Trinidad Callaloo.

Trinidad Callaloo is made primarily from dasheen bush (also known as baji or spinach). This is a great dish for a Sunday lunch and is commonly cooked with crab or a salted meat (beef/pork/chicken feet). (I may post a video with crab at some point) This particular recipe is for a vegetarian version which has no meat/crab but I can assure you is every bit as tasty.

The great thing about Callaloo is that you can modify the ingredients to suit your taste. You can have it as a side dish or you can have it as a soup.

BTW - I actually recorded this video post the middle of last year and just simply as a test I uploaded it to my personal account. Apparently I only uploaded me cutting up all ingredients so needless to say I got comments about magic callaloo lol. Well hopefully this post will redeem me to a certain extent.

Ingredients

2 tbsp Golden Ray margarine
1 bundle dasheen bush (baji/spinach)
1/2 pound pumpkin (diced)
3 cloves garlic
4 medium ochroes
1 small onion chopped
1 pimento pepper
1 bundle chive
1 bundle celery
1 bundle shaddon beni
1 cup coconut milk
2 cups water
1 hot pepper
Salt to taste
Black Pepper to taste
2 Maggie Flavor D Pot crab Flavor Powder (optional)
N.B. 2 tsp each of garlic and onion powder can be substituted for flavoring
