 How to make Fried Tomatoes Choka

When we here in Trinidad talk about Tomatoes Choka, we are usually referring to one of two varieties, the first being when you roast the tomatoes and the other being when you fry the tomatoes. The recipe I have for you today is our version of the fried tomatoes choka. ( I will do the roasted one at a later date for you as well)
Now there are also different ways of doing this and everyone will undoubtedly have their own particular way of making it. This is how we do it home by me.

This is a simple recipe for a tasty dish and it takes no time at all to prepare, so those of you who are in a hurry all the time should be able to find some time to make this one. Fried tomatoes choka like most chokas are eaten in Trinidad with Sada Roti. I will try my best to have a Sada Roti post soon since I am sure this is the first of many choka posts... lol

Ingredients

6-8 small ripe tomatoes
1/2 small onion chopped
3 cloves garlic minced
1/2 hot pepper (or to taste)
2 tbsp vegetable oil
Salt to taste
1/4 cup water (as needed)
